Little Bits from My Kitchen, vol. 5

This is just a quick little thing I thought I would post because we had it last night and it was such a hit with Spencer. We had tacos for dinner with some amazing tri-trip cooked outside on the grill. Spencer has been a bit hit or miss with dinner lately, but this was a definite success because it was a mini personal taco bar!

This was all my husband’s idea. He used a juice glass to cut circles from a flour tortilla and I put all of the fixings (meat, beans, cheese, tomatoes, and guacamole) on his place and Spencer loved it. He made himself six (SIX!!!) mini tacos and had two servings of all of the fixings, except for the meat. We used soft taco sized and got 3 minis per tortilla. This also works with a round cookie cutter. I cut up the second batch and apparently don’t have the same skills with a glass as my husband.

Normally when we have tacos, Spencer eats about half of a taco and most of the stuff that falls on his plate, so this was really great.

Plus the tomatoes turned out super yummy- they were sort of a mix between pico de gallo and a simple tomato salad. I just chopped them, mixed with fresh lime, garlic powder and salt. So good. Not quite as spicy as a salsa, but much more zesty on a taco than plain tomatoes. Spencer loved them too.

Note to self: mini taco bar does not prevent cheese from getting all over the floor.

    Oh, that damn shredded cheese. It’ll get you every time. But! He ate 6! Smile and clean up the cheese, right? I’ll have to try this. Z typically likes hard tacos, even though they make a mess (and I noticed he likes to break them chip size anyway, so maybe the soft tacos he can do himself will work). Guacamole is ALWAYS a hit. (Having our share of hit or miss meals lately too).

    Shredded cheese is always such a mess. I finally learned that it is better to leave it for a few hours and then it dries out enough to sweep up easily.

    Spencer mostly eats what we are eating but then some days all he wants is a turkey sandwich. Kids are weird. And fickle.
