When Harvard Sweet Boutique asked me if I would like to review a selection of their baked goodies, saying yes was a no brainer. And then, they miraculously arrived on a Friday evening that was capping the worst day in the worst week in a long time. Not only were they delicious cookies, they are magical.
When we opened the (super cute polka dot!) box, Spencer couldn’t decide where to begin. The box we received contained a selection of brownies and cookies including a chocolate fudge brownie, a mint chocolate fudge brownie, a raspberry chocolate fudge brownie, a vanilla sea salt caramel brownie, a chocolate chip cookie, a peanut butter chocolate chip cookie and a buttercrunch cookie.
My husband’s favorite was of course the chocolate brownie that came in his favorite flavor plain. Spencer adored the peanut butter chocolate chip cookie. He thought the chocolate dip was so fancy and he asked for another “fancy cookie” for days afterwards. I loved the mint brownie. Chocolate and mint is one of my all time favorite flavor combinations.

Low-Carb Peanut Butter Chocolate Chunk Cookies (from Sue George, owner of Harvard Sweet Boutique)
Nutritional information: 12g carbohydrates per 1 oz. serving
Yields approx. (36) 1 oz. cookies.
8 oz (1 stick) unsalted butter (room temperature)
1/2 c peanut butter (creamy)
1/2 c light brown sugar
1/2 c sugar
1/2 teaspoon vanilla extract
1 ¼ c flour
1 teaspoon baking soda
1/4 teaspoon salt
1 c semisweet chocolate chunks
- Preheat oven to 350 degrees
- Prepare baking sheets with parchment paper
- Cream butter, peanut butter, light brown sugar and sugar with mixer
- Add egg and vanilla and mix well
- Sift together flour, baking soda and salt and whisk to mix
- Add flour mixture to peanut butter mixture and stir until just blended
- Add chocolate chunks and mix well
- Bake 12-14 minutes until golden brown
