My Microwave Broke and I Lost 3 pounds
Now, I know in the grand scheme of things, 3 pounds isn’t much of a weight loss, but my weight has been creeping up all year and it was certainly a wake-up call. I think I had been letting what used to be occasionaly (and slightly gross, yet delicious) treats like pizza rolls, ramen and hot pockets had becoming all to frequent lunches. I realize these foods can all be cooked outside of a microwave, but their main appeal is speed and lack of dishes, which once you are baking pizza rolls in the toaster oven and it takes 30 minutes AND uses a pan, it cuts their deliciousness by at least 75%.
So. My microwave broke and I was forced to be a little more creative for lunch and I realized making delicious things can be really fast too and also use no pans. Like this:
This was so simple and just tasted time consuming. I don’t know why I don’t make lunches like this more. I sliced the tomatoes and basil while the basil and then just assembled: spread the herbed goat cheese on the bagel, stacked on the tomato (sprinkled with a little salt) and added basil. Delicious and ready to eat in 5 minutes. Bonus: no pans – just a cutting board and that basically just rinses clean.
The other super speedy meal I made was a tomato cucumber salad:
Again, fast and easy with just a cutting board to wash – slice cucumber, slice tomato, drizzle with olive oil, sprinkle with pepper. I used to make this with balsamic, but discovered I like it better with just the oil. I ate it with some leftover bread and butter from dinner the night before. This would also work on a bagel or toast with cream cheese (which is how I ate the leftovers the next day).
In my vegetable frenzy, I also pickled these. I didn’t love them after 2 days, so I am letting them sit awhile longer before passing final judgement and then I will try again. I love a good pickled veg mix.
