Cheese-Stuffed Colombian Arepas Recipe - Classic Homemade Guide

Discover the magic of Colombian cuisine with these irresistible cheese-stuffed arepas. These golden corn cakes, with their crispy exterior and gooey cheese center, are a perfect blend of comfort and flavor. Whether you’re looking for a unique appetizer or a satisfying snack, these arepas are sure to impress!

Originating from the vibrant culinary landscape of Colombia, these arepas are a testament to the country’s rich food culture. Imagine biting into a warm, slightly crispy corn cake only to be surprised by a molten core of cheese – it’s an experience that will transport your taste buds straight to the bustling streets of Bogotá.

Our recipe draws inspiration from the traditional arepas found in La Calera, a charming town just outside Bogotá. There, these cheesy delights are often cooked on rotating stone pedestals near open coal fires, infusing them with a subtle smokiness that elevates their flavor profile.

While we may not all have access to traditional Colombian cooking methods, fear not! This recipe brings the authentic taste of Colombia right to your kitchen, using simple techniques and readily available ingredients. Let’s dive into the world of arepas and create a dish that’s bound to become a new favorite in your home.

Ingredients

  • 2 cups masarepa (pre-cooked corn flour)
  • 2 ounces (about 1/2 cup) finely crumbled queso fresco (optional)
  • 1 cup water, plus more as necessary
  • 1 teaspoon vegetable oil
  • Kosher salt
  • 1/2 pound mozzarella or other good melting cheese, sliced or grated
  • 2 teaspoons butter

Directions

  1. Begin by preheating your toaster oven or regular oven to 325°F (160°C), ensuring the rack is positioned in the center. In a medium bowl, combine the masarepa, crumbled queso fresco (if using), water, and vegetable oil. Use your hands to knead the mixture until it forms a cohesive dough.
  2. Test the dough consistency by flattening a small amount between your palms. If the edges crack, gradually add more water, one tablespoon at a time, until the dough becomes supple and smooth without being sticky. Season the dough with salt to taste, then cover and let it rest for 5 minutes.
  3. Divide the dough into 8 equal portions and roll each into a ball. On a wooden cutting board (or a regular board covered with plastic wrap or parchment paper), flatten each ball into a disk approximately 5 inches in diameter and 1/4-inch thick.
  4. Place 1/4 of the cheese in the center of one disk, leaving a 1/2-inch border around the edges. Cover with a second disk and carefully seal the edges, trying to remove as much air as possible from the center.
  5. Shape the edges of the arepa with one hand to create an even, round disk.
  6. Heat a 12-inch cast iron or non-stick skillet over medium-low heat and melt the butter. Add the arepas to the pan, moving them around occasionally to ensure even cooking. Cook until the first side develops charred spots and a dry crust forms, about 5 minutes. Flip and cook the second side for another 5 minutes, or until a dry crust forms.
  7. Transfer the arepas to a baking sheet and place in the preheated oven. Bake for approximately 10 minutes, or until they’re heated through and the cheese is fully melted. Serve immediately and enjoy your homemade cheese-stuffed Colombian-style arepas!

Notes

Masarepa, the key ingredient in these arepas, is a type of pre-cooked cornmeal. You can find it in the Latin section of most supermarkets, available in both white and yellow varieties. While this recipe calls for white masarepa, feel free to use yellow if that’s what you have on hand.

For an extra flavor boost, try adding crumbled cheese to the dough. Colombian-style queso fresco is ideal, but if you can’t find it, substitutes like cotija, ricotta salata, or feta work well too. Keep in mind that depending on the moisture content of the cheese, you may need to adjust the amount of water in the recipe.

While this recipe uses a stovetop and oven method, arepas are versatile and can be cooked in various ways. If you have a panini press or grill, feel free to use those for cooking your arepas. Just remember to keep the heat low to ensure even cooking and melting of the cheese.

Serving Suggestions

These cheese-stuffed arepas are delicious on their own, but you can elevate them further with some creative toppings or sides. Try serving them with a fresh avocado salsa, a dollop of sour cream, or a zesty chimichurri sauce. For a heartier meal, pair your arepas with a traditional Colombian beans and rice dish or a light green salad.

Storage and Reheating

While these arepas are best enjoyed fresh and hot, you can store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a preheated 350°F (175°C) oven for about 10 minutes, or until heated through and the cheese is melty again.
