  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup grapeseed or other neutral oil
  • 1/2 cup sugar mixed with 1 teaspoon cinnamon for finishing

Directions

  1. Preheat your oven to 350°F (175°C) and position the rack in the middle level.
  2. In a bowl, whisk together the flour, baking powder, and salt until well combined.
  3. In a separate bowl, beat the eggs until smooth. Add sugar and whisk until the mixture becomes creamy. Stir in the vanilla extract and oil.
  4. Gently fold the flour mixture into the egg mixture, ensuring all the flour is incorporated. Add your choice of raisins, chocolate chips, and walnuts, folding them in evenly.
  5. On a lightly floured surface, divide the dough in half. Shape each half into a log, about 14 to 18 inches long. Place the logs on a baking sheet and flatten them slightly. Bake for 25-30 minutes, or until they’re well-risen and firm to the touch.
  6. Allow the logs to cool on the baking sheet. Meanwhile, adjust your oven racks to the upper and lower thirds of the oven.
  7. Once cooled, use a sharp serrated knife to slice the logs diagonally into 1/2-inch pieces. Coat each slice in the cinnamon-sugar mixture and place them back on the baking sheet, cut side down.
  8. Return the slices to the oven and bake for up to 20 minutes more, until they’re dry and crisp.
  9. Let the Mandelbrot cool completely before storing them in an airtight container, with parchment or wax paper between layers.
