- 4 soft hamburger buns
- 4 tablespoons mayonnaise, preferably Japanese-style
- 2 cups finely shredded green cabbage
Directions
- Shape the beef into 4 patties, making them slightly wider than the buns and creating a small depression in the center to prevent bulging. Season generously with salt and togarashi, then refrigerate. Prepare a plate or cutting board with evenly spread scallions.
- Prepare your grill for two-zone cooking. For charcoal, light one chimney of coals and arrange them on one side of the grate. For gas, set half the burners to high. Preheat the grill with the lid closed for 5-10 minutes, then clean and oil the grates.
- Grill the burgers over direct heat, covered, flipping occasionally. Cook until well-charred and the internal temperature reaches 110°F for medium-rare or 120°F for medium, about 5-7 minutes total. Brush both sides with teriyaki sauce and continue cooking, flipping and basting, until they reach 120°F for medium-rare or 130°F for medium.
- Transfer the cooked burgers to the scallion-covered surface. Brush with more sauce and flip to coat with scallions. Toast the buns on the grill until crisp. Spread mayonnaise on both bun halves, then layer half the cabbage on the bottom buns. Place the burgers on top, brush with more teriyaki sauce, add the remaining cabbage, and close the buns.
