Ingredients for Wild Mushroom Vol-au-Vent

  • 1 sheet frozen puff pastry, thawed but very cold
  • 1 1/2 tablespoons unsalted butter
  • 8 ounces wild mixed mushrooms, chopped to a rubble
  • 1 whole, smashed garlic clove
  • 2 stems fresh thyme
  • Salt and pepper
  • 1 tablespoon dry white wine
  • 2 tablespoons crème fraîche

Step-by-Step Instructions

  1. Preheat your oven to 400°F (200°C) to ensure it’s perfectly hot for your pastry.

  2. On a lightly floured surface, unfold your cold puff pastry. Using a 2.5-inch biscuit cutter, cut out 9 circles. Create a shallow indent in the center of each circle with a 1.5-inch cutter, being careful not to cut all the way through.

  3. Place the pastry circles on a baking sheet and bake for 20 minutes until golden and puffed.

  4. While the pastry bakes, prepare your mushroom filling. In a wide sauté pan, melt the butter over medium heat. Add your chopped wild mushrooms, smashed garlic, and thyme stems. Sauté for about 4 minutes, until the mushrooms have reduced in size and the pan looks dry. Season with salt and pepper, then pour in the white wine, allowing it to reduce. Remove the garlic and thyme stems, take the pan off the heat, and stir in the luscious crème fraîche.

  5. Once your pastry shells are baked and cooled slightly, use a sharp paring knife to carefully remove the center discs. Fill each shell generously with your fragrant mushroom mixture, then gently replace the pastry tops.
