Roasted Garlic and Feta Chicken Sausage Recipe

  • 3 small heads garlic
  • 1 tablespoon olive oil
  • 4 pounds skin on, boneless chicken thighs, cubed
  • 10 ounces feta cheese, crumbled, divided
  • 1/4 cup finely chopped shallots
  • 2 tablespoons finely chopped fresh oregano
  • 2 tablespoons kosher salt
  • 1 tablespoon freshly ground black pepper
  • 2 tablespoons red wine vinegar, chilled
  • 2 tablespoons juice from 1 to 2 lemons, chilled
  • Natural hog casings, soaked in lukewarm water for at least 30 minutes and rinsed

  1. Preheat your oven to 350°F. Slice off the top quarters of the garlic heads. Place them cut-side down on a sheet of aluminum foil, drizzle with olive oil, and seal the foil. Roast directly on the oven rack for about 20 minutes until the cloves turn brown and soft. Let them cool for 10 minutes, then squeeze the roasted garlic into a small bowl.
  2. In a large bowl, mix the roasted garlic, chicken, half of the feta cheese, shallots, oregano, salt, and pepper. Chill the mixture until you’re ready to grind.
  3. Using a meat grinder with a small die, grind the mixture into a bowl set in ice.
  4. Transfer the ground mixture to a standing mixer. Using the paddle attachment, mix on low speed for 1 minute. Add the remaining feta, vinegar, and lemon juice. Increase speed to medium and mix for another minute until the liquid is fully incorporated.
  5. Form a small patty from the sausage mixture and cook it in a frying pan over medium-high heat. Taste and adjust seasonings if needed. Keep the rest of the mixture refrigerated.
  6. Stuff the sausage mixture into the prepared hog casings, twisting into 6-inch links. Refrigerate until you’re ready to cook.
  7. To cook, preheat your grill to medium-high heat. Grill the sausages until they reach an internal temperature of 160°F. Let them rest for 5 minutes before serving.
