  • One recipe homemade papris, or one 12-ounce bag of store-bought papris
  • 1 cup (about 250g) boiled, peeled, and cubed russet potato
  • 1 can (434g) chickpeas, drained (or equivalent freshly cooked from dried)
  • Chaat Masala spice mixture, to taste
  • 1 pint (450g) whole-milk yogurt
  • 1 small onion, diced
  • One recipe homemade Spiced Tamarind Chutney or one jar of store-bought tamarind chutney
  • Mint chutney (recipe above)
  • One recipe sev or one bag of store-bought sev crackers

Directions

  1. For the Mint Chutney: Prepare an ice bath. Blanch cilantro and mint in salted boiling water for about 20 seconds until bright green. Quickly transfer to the ice bath to halt cooking, then drain thoroughly.
  2. Remove thick mint stems and roughly chop herbs with tender stems. Blend herbs, lime juice, and serrano pepper in a blender, adding just enough cold water to create a smooth consistency. Avoid over-blending to prevent heat buildup and discoloration. Season with salt to taste. This vibrant chutney will keep in the refrigerator for 2-3 days.
