  • 1 tablespoon unsalted butter (1/2 ounce; 15g), softened, divided
  • 1 good-quality English muffin, split
  • 1 slice good-quality Canadian bacon
  • Nonstick cooking spray
  • 1 large egg
  • Kosher salt and freshly ground black pepper
  • 1 slice American, cheddar, Swiss, or Jack cheese


  1. Start by spreading 1 teaspoon of butter on each English muffin half. Place them in a 10-inch nonstick or cast iron skillet over medium heat. Cook for about 5 minutes, swirling and gently pressing to ensure even contact and browning. Once golden, transfer to a sheet of aluminum foil, split side up.
  2. In the same skillet, melt the remaining 1 teaspoon of butter over medium-high heat. Add the Canadian bacon and cook for about 1 1/2 minutes, turning frequently until it’s browned and crisp around the edges. Place the bacon on the lower muffin half.
  3. Now for the egg hack: Place the lid of a quart-sized, wide-mouthed Mason jar (both the lid and the sealing ring) upside down in the skillet. Spray the inside with nonstick cooking spray and crack the egg into it. Break the yolk with a fork and season with salt and pepper. Pour 3/4 cup (180ml) water into the skillet, cover, and cook for about 2 minutes until the egg is set.
  4. Using a thin spatula, transfer the Mason jar lid to a paper towel–lined plate. Drain the skillet and wipe it dry. Carefully remove the egg from the lid and place it on top of the bacon. Add the cheese slice on top. Close the sandwich and wrap it in aluminum foil. Return it to the empty skillet with the heat off for 2 minutes, flipping occasionally. Unwrap and enjoy your gourmet creation immediately!
