Ultimate Overnight Sous Vide Bacon: Melt-in-Your-Mouth Perfection
Discover the secret to achieving crispy-yet-tender bacon that will revolutionize your breakfast game!
Bacon lovers, prepare to have your minds blown! This sous vide bacon recipe takes a bit of planning, but the results are nothing short of extraordinary. Imagine biting into a slice of bacon that’s perfectly crisp on the outside, yet melts in your mouth like the most luxurious pork belly confit. Sound too good to be true? Think again!
We were skeptical at first – after all, how could you improve on classic fried bacon? But after giving this method a try, we’re totally converted. The overnight sous vide process transforms ordinary bacon into a gourmet delicacy that will impress even the most discerning brunch guests.
The magic happens at a precise 145°F (63°C), where the bacon slowly tenderizes while retaining all its juicy goodness. A quick sear before serving adds that irresistible crispy exterior, giving you the best of both worlds. Trust us, once you try this bacon, you’ll never want to go back to regular pan-frying again!
Ingredients
- 1 pound (450g) thick-cut bacon, still in its package (see notes)
Directions
- Set your sous vide water bath to 145°F (63°C). Submerge the bacon, still in its original packaging, directly into the water. Let it cook for a minimum of 8 hours and up to 48 hours for ultimate tenderness. When you’re ready to serve, remove the bacon from the water bath. Either proceed immediately to step 2 or chill in the refrigerator or freezer for later use (see notes).
- To achieve crispy perfection, preheat a large skillet or griddle over medium-high heat for 5 minutes. Add the sous vide bacon and cook, applying gentle pressure with a bacon press or spatula to keep it mostly flat. Sear until the first side is beautifully browned and crisp, about 2 minutes. Flip the bacon and briefly cook the second side for about 15 seconds, just to add a touch of color.
- Transfer your crispy sous vide bacon to a paper towel-lined plate to remove any excess fat. Serve immediately and prepare for bacon bliss!
Notes
Feel free to cook as much bacon as will fit in your sous vide water bath. This method is perfect for meal prep!
While you can cook bacon directly in its original packaging, unpackaged bacon should be sealed in a vacuum bag or a zipper-lock bag with the air removed before cooking.
Make-Ahead and Storage
This sous vide bacon is incredibly convenient for busy mornings. Once cooked, it can be refrigerated for up to two weeks or frozen for several months. Simply defrost before searing for a quick and delicious breakfast any day of the week.
